roast sliced peppers and onions and whatever else you want in the oven with some olive oil and a little sea salt. Put them on corn tortillas with black beans and cabbage and corn and whatever else you want. These are really good with some avocado. Top with shredded cheese and sour cream. I wish we would have put some corn in them, but oh well. Muy bien.
