Cooking for Fun, Posting Out of Spite

First up, a recipe taken from Bon Apetit...








Slice up some Yukon Gold potatoes paper-thin and place 2 halibut filets in the center.


















Then, wrap the potato slices around the filets and sautee for 3 minutes per side.










We served the potato-crusted halibut with toasted sesame seed green beans, and kale chips.  I wish I had more pictures of the kale chips... they were so amazing!  And ridiculously simple!  Just toss some kale leaves with olive oil and put them in a 200 degree oven for 30 minutes.  They literarily melt in your mouth!  SOOOOOO GOOD!
